You might want to look through the usecode. I remember there was some backstory on Selena that didn't make it in the game, so there might be some cut dialog or something for Deadeye as well.

Also, Shamino's castle is the only place in the game where you fight the "animated armors", which you come across in some sort of armory/barracks. These were the first type of Automaton, which makes it pretty obvious that Shamino's subjects went on to become the Ophidians.

It's important to remember that BG was released on 3.5 diskettes, and adding even a single disk would have cost OSI a lot of moolah. According to the Ultima III map, Trammel has a period of 48 days, and Felluca 16 days (which corresponds to the in-game logic of the left moon changing phase for every three changes of the right moon). I suspect they kept it as 24 hours in Ultima V and VI. (In V I think it's only Felluca that matter...

There's also Dawn, which would be impossible to do with Exult. Well, not impossible, but you'd have to add a property to every type of object in the game to indicate which phases of which moon it's visible with (including NPCs!).
