on Redhat 7.3 running exult 1.0.0 I just
1 created two directories in my /home :/BG for blackgate and /SI for serpent isle
2 using unzip unpack these CD files: ultima7.zip into /BG and serpent.zip into /SI
3 run exult in either /BG or /SI to run game

It's not ready for prime time but no need for windows/dos installing/coping
do what you want with the .pdf files just keep them handy while playing game
for reference material.

of course you realize that installation routine that is described above is for the original diskettes version....
